I've traveled to 25+ countries and I'm a nervous flier. Nothing really helps when the turbulence hits until I read an article from a neurologist. He noted to take out a notebook and write your name (or a phrase) over an over with your non-dominant hand.

I thought it was silly until I tried it and it actually worked. I don't know the neurological specifics but apparently you're working the part of your brain that would normally freak out by doing this seemingly complicated (or non-familiar) task.
